There is still more than one holiday ahead of us, when we really want to treat our home or visiting guests to an unusual and very tasty salad. Such a fairly simple to prepare, but very bright and beautiful salad is the Mushroom Glade salad. Today we will cook it with pickled mushrooms. This recipe was provided to us by my relative, Ruzanna, who is an excellent cook and loves to welcome guests and prepare luxurious tables for them. I already have one recipe for a layered salad “Mushroom Glade” on my website, but we prepared it with other mushrooms, marinated with small champignons. Here the salad is prepared a little differently. So, let's get started.

Required:

  • Boiled potatoes - 2-3 pcs.
  • Boiled eggs - 3-4 pcs.
  • Hard cheese - 100-150 gr.
  • Smoked chicken breast - 1 pc.
  • Pickled cucumbers - 2-3 pcs.
  • Boiled carrots - 2-3 pcs.
  • Pickled mushrooms - we have honey mushrooms - 1 b. (250 gr.)
  • Greens - we have green young onions - a bunch
  • Mayonnaise

How to prepare a delicious layered salad “Mushroom Glade” with honey mushrooms:

As the first layer, you need to place boiled potatoes grated on a coarse grater in a deep salad bowl. Spread mayonnaise on top.

The second layer is grated eggs on a coarse grater. Mayonnaise on top.

The third layer is hard cheese grated on a coarse or fine grater. Mayonnaise.

The fourth layer is to chop the smoked chicken breast. Grease with mayonnaise. Here you can use boiled chicken breast fillet or fry the breast in a frying pan, and then chop it and add it to the salad. It's up to you. The option with smoked chicken breast is very tasty and wonderful.

Fifth layer - chop the pickles, squeeze a little with your hands and place evenly on the chicken. There is no need to add mayonnaise here.

Sixth layer - grate the boiled carrots on a coarse grater and place in an even layer. Grease with mayonnaise.

The seventh layer is to sprinkle the carrots with finely chopped green onions.

The eighth layer is to place pickled mushrooms, namely honey mushrooms, on top of the fresh herbs.

The salad needs to be sent to a cool place or in the refrigerator so that it is nourished and becomes even tastier. We will serve the salad in a common salad bowl, although such salads are usually made the other way around, placing the first layer of mushrooms - greens - carrots - pickled cucumbers - chicken breast - cheese - eggs - potatoes, in a greased salad bowl with vegetable oil (so that the salad then comes away from the walls perfectly), and then, when it’s time to serve the salad, they simply lay it out, inverting it onto a large flat platter. Thus, the mushroom glade salad, or as it is also called - Deadly Number, is a upside-down salad. In this case, Ruzanna prepared her salad by placing all the vegetables on the bottom and garnishing it with pickled mushrooms on top. This option also exists.

The “Mushroom Glade” salad has been known to many people for a long time. It is often prepared for holiday feasts: it has a chic appearance and great taste. It’s quite simple to prepare, and if you cook the necessary ingredients in advance, it’s also quite quick. Having prepared this salad with Korean carrots once, I realized that this is what was missing here. Korean carrots play an important role in this salad. Try cooking and see for yourself.

Prepare the ingredients for the Mushroom Glade salad with Korean carrots.

Place the marinated champignons with the caps down in a deep and even pan. They need to be laid out tightly next to each other.

Wash the dill and green onions, shake off excess moisture and chop finely. Sprinkle mushrooms generously with herbs.

Boil the potatoes in their jackets, peel and grate on a medium grater. Place in the next layer, spreading evenly over the surface.

Add salt to taste, and then add 1-2 tbsp. mayonnaise and smooth.

Add Korean carrots. There is no need to lubricate it with mayonnaise.

Place chicken fillet on top. It must be boiled in salted water and then cut into small cubes.

Top with grated hard cheese and grease with mayonnaise.

Boil hard-boiled eggs, remove shells, grate on a fine grater. Place the eggs in the final layer.

Grease the top with mayonnaise and leave the salad in the form for several hours in a cool place, and then put it on a dish.

To serve effectively, cover the dish with lettuce leaves and only then turn the dish over onto it. The salad is easy to remove and holds its shape perfectly.

Sprinkle the top a little with chopped dill.

Option No. 1 “Forest glade” with chicken

Required ingredients:

  • chicken fillet – 1 pc.;
  • pickled honey mushrooms – 350 g;
  • medium-sized potatoes – 2 pcs.;
  • fresh cucumber – 2 pcs.;
  • chicken egg – 4-5 pcs.;
  • salt pepper;
  • for decoration - greenery;
  • mayonnaise.

Boil and cool the necessary ingredients: chicken, potatoes, eggs.


Next we lay it out in layers:
  • 1st layer: place boiled, finely chopped chicken on the bottom of a salad bowl (it is advisable to take a larger diameter bowl); grease the layer with mayonnaise;
  • 2nd layer: cut the pickled mushrooms (leave some whole for decoration), place on top of the chicken;
  • 3rd layer: after the mushrooms comes potatoes, chopped or grated on a coarse grater, grease with mayonnaise;
  • 4th layer: grate the cucumbers on a coarse grater, you can add salt and pepper;
  • 5th layer: finely grated eggs are laid on top of all layers, greased with mayonnaise.

Advice to housewives: Squeeze the cucumber juice so that the salad does not become liquid.

We decorate the salad with caps of pickled mushrooms and herbs. Preparation takes less than an hour. Bon appetit.

Option No. 2 “Forest clearing” with honey mushrooms and Korean carrots

Required ingredients:

  • chicken breast – 300 g;
  • pickled honey mushrooms – 400 g;
  • egg – 3-4 pcs.;
  • hard cheese – 250 g;
  • potatoes (small) – 3 pcs.;
  • Korean carrots – 200 g;
  • mayonnaise + sour cream (1:1 mixture);
  • fresh herbs - several bunches.

Cooking process:

  • 1st layer: chopped pickled mushrooms are laid out on the bottom of the salad bowl ( We leave some of the whole ones for decoration.), lubricated with the mixture;
  • 2nd layer: chop the greens and lay them on top of the mushrooms, brush with mayonnaise;
  • 3rd layer: on top of the greens - Korean carrots;
  • 4th layer: then add grated boiled potatoes and secure everything with mayonnaise;
  • 5th layer: cut boiled chicken into small cubes (very tasty with smoked chicken breast), lay out, grease with mayonnaise mixture;
  • 6th layer: boil hard-boiled eggs, grate on a grater (large);
  • 7th layer: grate hard cheese on a coarse grater, grease with sour cream and mayonnaise mixture.

Take note: we decorate the salad with herbs, pickled honey mushrooms, from tomatoes you can make fly agarics with drops of mayonnaise, from cucumber you can make a basket for mushrooms.

Option No. 3 “Mushroom Glade” with ham

Required ingredients:

  • pickled honey mushrooms – 350-400 g ( you need to choose large mushrooms);
  • cheese (hard, for example, Dutch, Russian) – 100 g;
  • potatoes (large) – 1 pc.;
  • cucumber (fresh) – 1 pc.;
  • ham – 300 g;
  • chicken egg – 3 pcs.;
  • mayonnaise-sour cream mixture.
  • greens (parsley, green onions, dill) - 2 bunches.

Cooking technology:

Boil and then cool the potatoes and eggs.

  • 1st layer: place honey mushrooms on the bottom of the salad bowl ( It’s better to lay out the pickled mushrooms caps down);
  • 2nd layer: spread grated hard cheese on top of honey mushrooms and season with mayonnaise-sour cream mixture;
  • 3rd layer: cucumber, cut into strips;
  • 4th layer: lay out diced ham, pre-greased with mayonnaise;
  • 5th layer: place grated eggs on top of the ham;
  • 6th layer: grated potatoes, greased with mayonnaise and sour cream mixture.

After an hour, turn the salad over so that the mushrooms are on top. Decorate the space between the mushrooms with parsley. The salad is ready to eat. Bon appetit to you and your loved ones!

A beautiful and tasty Lesnaya Polyana salad can decorate any holiday table. You can serve it by mixing all the ingredients together. However, more often the Forest Glade is laid out in layers. This way it looks more impressive.

Due to the presence of meat, men really like this salad. Mushroom lovers are also partial to this appetizer. Although, contrary to popular belief, this ingredient is not at all necessary in this salad. The gifts of the forest are always present in a very similar appetizer - the Mushroom Glade salad.

But we are not talking about the subtleties in the name, but about the methods of preparing a wonderful snack dish. So let's get started.

Ingredients:

  • Marinated mushrooms (whole champignons, honey mushrooms)- 200 grams
  • Chicken fillet- 200 grams
  • Pickled cucumbers- 2-3 pieces
  • Potato- 2-3 pieces
  • Carrot- 1 piece
  • Hard cheese- 100g
  • Eggs- 3 pcs.
  • Greenery- small bunch
  • Mayonnaise- 200 grams
  • Salt, ground black pepper- taste
  • How to prepare Lesnaya Polyana salad

    1 . First you need to prepare a container for the salad. Since we will be collecting it upside down and then turning it over, we need a container with straight sides or flaring towards the top. Or you can do it like we did, just take a sieve and line the bottom and edges with cling film. Boil chicken, carrots, eggs and potatoes.

    . Place champignons on the bottom, caps down; you can replace them with pickled honey mushrooms or other mushrooms.

    3 . Next, lay out the greens so that in the finished salad the mushrooms end up in a green forest clearing.

    4 . Shred the boiled chicken and place the next layer. Salt and pepper (a pinch).

    . Next you need to generously lay out a layer of mayonnaise. It will be tasty and healthy, in fact it is very simple and quick, be sure to try it.

    6 . Chop the boiled carrots on a coarse grater and add a bright layer of Lesnaya Polyana salad.

    7 . Season with mayonnaise.

    8 . A layer of cheese shredded on a coarse grater. Since mayonnaise and cheese are quite salty, there is no need to add salt on these layers.

    9 . Grease with mayonnaise.

    . Grate the boiled eggs on a coarse grater and place in the next layer of Forest Glade.

    Lesnaya Polyana salads can contain not only meat, poultry or ham. Crab sticks, as well as boiled or fried fish, are perfect ingredients. There are options that even use canned fish. And people who fast will like the option with beans. So imagination when preparing the Forest Glade snack is quite appropriate. The main thing is that the products are combined with each other, and everything else is allowed.

    Lesnaya Polyana salad with pork

    The most common recipe for preparing the Forest Glade appetizer still involves the presence of mushrooms. Most often, canned champignons are used for it. They are available all year round, which means you can prepare a similar version of the salad any day. For this you will need:

    • pork – 200 g;
    • canned champignons – 50 g;
    • cucumbers (fresh and salted) – 100 g of each type;
    • carrots – approximately 150 g;
    • eggs – 3 pcs.;
    • mayonnaise - for dressing;

    Place pork in lightly salted water and boil. When the meat has cooled, cut it into cubes. You shouldn’t cut it too coarsely, but you shouldn’t chop it too small either. You can also cook carrots at the same time. It needs to be cooled under running cold water, then peeled and cut into small cubes. It is best to cut cucumbers, both fresh and pickled, into thin slices. Simply finely chop the boiled eggs with a regular knife.

    Place the chopped ingredients in a large salad bowl, season with spices and sauce, then mix thoroughly. Place the finished salad on a flat dish and level the top so that it becomes flat. This is most conveniently done using a special ring for forming salads, but you can get by with a regular spoon. Place the champignons on top of the appetizer, covering the entire surface with them. Additionally, you can decorate the appetizer with parsley. After this, the dish is ready to serve.

    Salad Lesnaya Polyana with honey mushrooms

    Unlike the previous salad, this version uses not champignons, but real forest mushrooms - honey mushrooms. The original recipe uses pickled mushrooms, but you can also use salted ones. The dish will not lose at all from this. And one more nuance. This version of Lesnaya Polyana “loves” a large amount of mayonnaise. This is worth keeping in mind for people watching their figure. For this version of the Forest Glade you need to prepare the following products:

    • beef or veal – 300 g;
    • pickled honey mushrooms – 200-250 g;
    • potatoes - 3-4 medium-sized root vegetables;
    • cucumbers (fresh and pickled) – 150 g of each type;
    • cheese - approximately 150 g;
    • eggs – 3 pcs.;
    • mayonnaise - for dressing;
    • parsley, black pepper, salt - to taste.

    Boil potatoes in their skins. Boil the meat in water with the addition of salt, allspice and bay leaves. Peel the cooled potatoes and grate them on a shredder. Cut the meat and both types of cucumbers into thin slices. Boil the eggs and finely chop.

    Place potatoes on a flat-bottomed plate, add salt and pepper. Place a layer of pickled cucumbers on top. Place slices of meat on them, which also need to be salted, seasoned with pepper and greased with mayonnaise. Next, lay out boiled eggs, slices of fresh cucumbers and finely grated cheese. Grease the top and sides of the salad with mayonnaise. Place pickled mushrooms in random order on the very top and garnish with herbs.

    Forest Glade salad with Korean carrots

    The taste of this salad is made by two products: Korean carrots and smoked chicken. In principle, any part of the bird is suitable for this version of Lesnaya Polyana, but the best option would be smoked breast. Well, in general, to prepare such a snack you need to take:

    • smoked chicken breast – 300 g;
    • Korean carrots – 150 g;
    • fresh cucumbers – 100 g;
    • eggs – 3 pcs.;
    • mayonnaise - for dressing;
    • onion, dill and parsley, black pepper, salt - to taste.

    Boil eggs and potatoes, cool, peel and finely chop. If desired, you can grate the potatoes on a coarse grater. Chop the greens (dill, parsley and onion) as finely as possible, add salt, add mayonnaise and mix. Peel the cucumber and cut into cubes. Cut the chicken meat into small cubes.

    Line a small saucepan with straight sides with cling film and you can begin laying out layers of Forest Glade. Just a piece of advice, to make the salad look more impressive, the layers should be laid out as densely as possible, and the sequence of laying out is as follows:

    • whole mushrooms with caps down;
    • mixed greens;
    • Korean carrot;
    • chicken meat;
    • a little mayonnaise;
    • cucumber;
    • a little more sauce;
    • eggs;
    • mayonnaise;
    • potato.

    The dish prepared in this way must be put in the refrigerator and kept there for at least an hour. Before serving, take out the appetizer, cover the saucepan with a plate with a flat bottom, turn it over and remove the film. In this form, the Forest Glade can already be taken out for testing to household members or guests.

    Lesnaya Polyana salad, recipe with ham

    Lesnaya Polyana salad with ham also has an excellent taste. In its composition, it is in many ways reminiscent of the modern interpretation of Olivier, but additional ingredients make this type of snack much more refined. Well, the presentation form turns this version of Forest Glade into a real table decoration.

    • ham – 200 g;
    • marinated champignons – 400 g;
    • carrots - 1 root vegetable;
    • pickled or pickled cucumbers – 2 pcs.;
    • potatoes - 2 medium-sized root vegetables;
    • eggs – 3 pcs.;
    • canned green peas – 200 g;
    • cheese – 150 g;
    • walnuts – 50 g;
    • mayonnaise - for dressing;
    • onion and dill, black pepper, salt - to taste.

    Boil vegetables (carrots and potatoes) in their skins, peel and grate on a coarse grater. Cut hard-boiled eggs and all other products, with the exception of mushrooms, into small cubes. Drain the liquid from the jar of peas, place the product in a bowl and mix with chopped green onions.

    To assemble the salad, it is advisable to use a special molding ring. But if it is not there, then you can carefully form layers with a spoon. Place potatoes as the bottom layer and generously coat with mayonnaise. Then a mixture of green peas and onions is laid out, and on them a layer of pickled cucumbers, which are also smeared with mayonnaise. The next layers are carrots and ham. The meat ingredient should also be coated with sauce and sprinkled with walnuts ground in a coffee grinder. Now you need to put a layer of eggs and sprinkle them with grated cheese. Pour mayonnaise over the top and level. All that remains is to sprinkle the entire surface with chopped dill, and place the mushrooms on it, caps up.

    The finished dish should be allowed to brew for an hour and a half, after which you can remove the molding ring and bring the dish to the table.

    Lesnaya Polyana salad, recipe with chicken and cheese

    A simply chic version of the Lesnaya Polyana salad can be prepared with baked chicken breast. Despite the fact that it consists of almost the same ingredients as the previous version, the taste is completely different. And to prepare this type of snack at home you need to have:

    • chicken fillet – 250 g;
    • pickled mushrooms – 200 g (both champignons and wild mushrooms are suitable);
    • carrots - 1 root vegetable;
    • fresh cucumbers – 1 pc.;
    • potatoes - 3 medium-sized root vegetables;
    • eggs – 3 pcs.;
    • cheese – 100 g;
    • onion – 1 small head;
    • mayonnaise - for dressing;
    • onion, parsley and dill, black pepper, salt - to taste.

    Rub chicken breast (skinless) with salt and spices and bake in the oven. Cool the finished meat and separate it into fibers. Grate the carrots using a Korean carrot grater or cut into thin slices and fry with onion cut into half rings until fully cooked (the carrots should become soft). Boil the potatoes in their skins, as well as the eggs and cool. Grate the cucumber on a Korean carrot grater or cut into thin strips.

    When all the products are properly prepared, you need to take a large dome-shaped salad bowl, cover it with cling film and lightly grease it with oil. After this, you can begin assembly. The salad should be laid out in the following order:

    • mushrooms (if these are champignons, then they should be placed with their caps down);
    • chopped greens;
    • baked chicken, which needs to be thoroughly coated with mayonnaise;
    • cheese grated on a shredder, smeared with a small amount of sauce;
    • eggs, also coated with mayonnaise;
    • cucumbers (this layer should be lightly salted);
    • fried carrots with onions (cover with mayonnaise mesh on top);
    • shredded potatoes.

    Firm the salad a little with a spoon, lightly coat with sauce and smooth out. Wrap the resulting dish with the free ends of cling film and place in the refrigerator for several hours. When the salad is soaked, you need to unwrap it, cover it with a plate, turn it over and free it from the film. Ready!

    Recipe without mushrooms

    As mentioned above, there are a lot of varieties of snacks called “Polyana”. And if these gifts of the forest must be present in the recipe for Mushroom Glade, then Lesnaya Polyana can easily do without them. It is with this option that we should end this review. For this salad you will need:

    • ham – 200 g;
    • bell pepper – 1 pod (preferably yellow);
    • carrots - 1 root vegetable;
    • potatoes - 2 medium-sized root vegetables;
    • eggs – 2 pcs.;
    • processed cheese – 100 g;
    • onion – 1 small head;
    • mayonnaise - for dressing;
    • parsley, black pepper, salt - to taste.

    First you need to boil the potatoes and carrots, peel and grate them on a coarse grater. Grind processed cheese in the same way. Cut the remaining ingredients into cubes, and finely chop the onion and herbs.

    Place potatoes on a dish, brush with sauce and cover with ham. Place a layer of onion on it and grease it with mayonnaise. Then add carrots and bell peppers. Coat the vegetables with mayonnaise and top the salad with egg and cheese. Sprinkle everything with chopped herbs and you can serve the finished dish to the table.

    With honey mushrooms

    Mushrooms can be used marinated or fried. The Forest Glade salad with honey mushrooms differs in appearance from its counterpart with champignons, but is an equally tasty treat and has every right to decorate the tables of special events. Boiled breast can be replaced with smoked one, and cheese can be used not only for decoration, but also as an additional layer. It all depends on the taste preferences of the guests.

    Ingredients:

    • pickled honey fungus;
    • eggs – 4 pcs.;
    • carrots – 2 pcs.;
    • potatoes - 4 tubers;
    • pickled cucumbers – 2 pcs.;
    • boiled chicken breast – 1 pc.;
    • mayonnaise;
    • hard cheese (for decoration) – 100 g;
    • greens (optional).

    Cooking method:

    1. Boil the eggs, chop with a grater or fork.
    2. Cut the cucumbers into thin slices.
    3. Boil the vegetables and chop on a grater (large).
    4. Finely chop the breast.
    5. Grease the salad bowl with oil and cover with cling film so that the edges remain hanging.
    6. Lay everything in layers. Each honey fungus should fit snugly against each other. Then you need to lay out the greens, carrots, cucumbers, breast, eggs, and at the end - potatoes. Spread mayonnaise between layers.
    7. Place the salad bowl in a cool place (refrigerator) overnight or for 6-8 hours.
    8. After this time, remove the container and turn it over onto a wide plate. Carefully remove from cling film.
    9. Sprinkle grated cheese and herbs on top.

    With Chiken

    This option is considered classic. Polyana salad with mushrooms and chicken is easy to prepare and does not take much time. This option is very popular on holiday tables. You can take any mushrooms - from honey mushrooms, champignons, milk mushrooms and butter mushrooms, the main thing is to leave a few to decorate the surface. In addition to onions, you can also take dill; it perfectly imitates a green meadow.

    Ingredients:

    • chicken fillet – 300 g;
    • pickled mushrooms – 300 g;
    • carrots – 3 pcs.;
    • potatoes – 3 pcs.;
    • chicken eggs – 5 pcs.;
    • light mayonnaise;
    • onion – 1 head;
    • green onion – 50 g;
    • salt.

    Cooking method:

    1. Boil the chicken, cool.
    2. Cut the meat into oblong slices across the grain, then chop into pieces.
    3. Peel the vegetables and grate them on a coarse grater.
    4. Boil the eggs, chop.
    5. Finely chop the onion. To remove the pungent odor, you can scald it with boiling water.
    6. Chop the mushrooms. Leave a few whole pieces to decorate the dish.
    7. Place the ingredients on a plate in layers: ½ part grated carrots, ½ eggs, potatoes (half a portion), meat, mushrooms, onions. Add the remaining potatoes, eggs, carrots. Coat each layer with mayonnaise.
    8. Wash the onion feathers and chop finely. Decorate the dish around with it. Place whole mushrooms on top and add imitation grass.
    9. Let soak for about an hour.

    With champignons

    To prepare this dish, you can use champignons. The taste of the dish will change dramatically, but will remain just as unusual and beautiful in appearance. The recipe for the Mushroom Glade salad with champignons is simple, the time required is about 50 minutes. The design is unusual and memorable. This treat is definitely worth preparing for the holiday table.

    Ingredients:

    • chicken meat – 300 g;
    • marinated champignons – 1 jar;
    • eggs – 3-4 pcs.;
    • potatoes - 1 tuber;
    • carrots – 2 pcs.;
    • pickled cucumbers – 2-3 pcs. (depending on size);
    • mayonnaise;
    • fresh herbs - 1 bunch each.

    Cooking method:

    1. Place whole champignons, caps down, in a deep salad bowl.
    2. Cover them with small sprigs of greenery (imitation grass).
    3. Boil the chicken, chop, place on top of the greens.
    4. Next alternate: carrots, mayonnaise, carrots. Boil and grate the vegetables in advance.
    5. Then add grated eggs.
    6. Cover with sauce. Top with potatoes. Pre-boil the tubers and grate them.
    7. Grease, finish with a layer of diced cucumbers. To cover with a lid. Place in the refrigerator for 2-3 hours.

    With ham
